Chicken Broth!                 

     Many good soup recipes begin with chicken broth.  I have found the quality of the chicken broth makes a big difference in the taste of the soup.  While there are chicken broths you can purchase, (my favorite being the Imagine brand), homemade chicken broth is easy to make and quite inexpensive.  So here goes…

1  4-5 # natural or organic chicken (got to recommend the healthiest :-) )
2 carrots, chopped
1 stalk celery, chopped
1 onion, chopped  ( I usually just quarter the veggies)
3 tablespoons apple cider vinegar ( this helps release the calcium from the bones)
1/2 teaspoon marjoram
1/4 teaspoon basil
1 bay leaf
1 teaspoon parsley
2 teaspoons sea salt
a little pepper to taste can be added while cooking, if you like
    

      Place all of the ingredients into a large stock pot.  Fill with water (about 4 quarts).  Cook on high until boiling.  Cover and reduce heat to maintain a medium boil.  Cook for about 2-21/2 hours or until chicken is tender.  My technical way to decide if it is done is to see if the legs will easily come off. :-)

     I don’t measure the water, I just add it to a certain level in my stock pot and sometimes I add water as it cooks if I think it needs it.  This recipe will give you a rich, full flavored broth.  Yield: about 3-4 quarts.  I usually freeze my broth in 2 or 4 cup batches as most recipes call for amounts of 2 or 4 cups.  I have canned it before, but my utility bill is so high, it doesn’t really save me anything to can it.  I have stewed my chicken on the grill before to save on electricity.  It worked great!

      For the delicious cooked chicken, I remove it from the bone and freeze in 2 cup quantities. Most recipes calling for cooked chicken usually call for 2 cups.

 Now you have the beginnings of several good meals, including Pumpkin Soup.

I will get back to the final post on homeschooling soon, but I thought I would share this little bit of humor with you first

     Last November, we replaced our 20 something refrigerator with a new one.  The old one was falling apart and the ice maker had busted when we moved.

     We were all so excited about this brand new shiney appliance in the kitchen.  It is larger, has water and ice in the door and the ice maker works!  Here in the south, that REALLY matters. 

     Little did we know then how important our ice was to our civil government, but recently we found out.  We were having problems with the ice maker not working correctly.  The basket had cracked and that ice maker just wasn’t making much ice.  As I said, ice in the south in July is important!

     Thankfully, it is still under warranty, so out comes the repairman.  He replaced the basket and adjusted the temperature, but could not do anything about the output.  Our civil government’s Department of Energy a couple of years ago decided these refrigerators were causing us to use too much energy making ice and by golly, what about all the water those ice cubes take!   They created regulations  that ice makers cannot make more than about 8 cubes every 1-1/2 hours! 

     Wow, do I feel safer!   But it does make one wonder…

Could the next Czar be in control of Ice Cubes?

       They also decided we were using too much energy preheating our ovens.  Preheating causes the upper and lower elements to both stay on until the correct temperature is set, usually between 5-10 minutes.   They regulated that new ovens should have the top and bottom elements alternately come on until the correct temperature is reached, taking about 15-20 minutes to preheat.  I’m so glad those guys up there are keeping busy. 

     I wonder what Sam Adams would think about all of this? 

Guess I better go fill my supplemental ice trays.  :-)

     It is peach season here in Alabama and have we been enjoying them!  By purchasing 2nds, my buying club  was able to get them for $.45 per pound.  I bought 125 pounds.  Katie learned how to make and can peach jam while I canned the peaches.  Zach did a great job on peeling.  We are looking forward to enjoying the “flavor of summer” all winter long.  If you enjoy peaches, try to find some 2nds from an orchard.  They are delicious and economical.

Grilling beans and whole potatoes

“A penny saved is a penny earned” is not a very familiar saying in these days of so-called borrowing your way to wealth, but with hubby out of work for 3 months so far, we are reminded of how true this is. As many of my friends have been showing me, frugality and creativity go hand in hand!
An experiment in saving energy has been cooking on the grill. I have a dilapidated gas grill and began to wonder if I could use it as my stovetop, so I tried stewing a chicken on it! It turned out great plus my house did not have to get heated up. (Very important when another experiment is having the air conditioner off :-) )  Since then, I have cooked dried beans, brown rice, soup and boiled eggs on the grill. Today, I was trying to can dried black beans on the grill but my very old canner is unusable this year. If you try this, please let me know how it works out for you.
